  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

For the Chicken Stew:

  • 2 cups shredded cooked chicken (rotisserie works great)
  • 4 cups chicken broth
  • 1 cup milk
  • 1 medium onion, diced
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme
  • 1 tbsp butter or olive oil
  • 2 tbsp all-purpose flour (or gluten-free alternative for GF version)

For the Bisquick Dumplings:

  • 2 cups Bisquick mix
  • ⅔ cup milk
  • ½ tsp garlic powder (optional, for extra flavor)
  • 1 tsp parsley (optional, for garnish)

Instructions

1️⃣ Prepare the Chicken Stew

  1. Sauté the Vegetables: In a large pot or Dutch oven, heat butter over medium heat. Add diced onion, carrots, and celery. Cook for 5 minutes until softened.
  2. Add Garlic & Seasonings: Stir in minced garlic, salt, pepper, and thyme. Cook for 1 minute until fragrant.
  3. Thicken the Broth: Sprinkle flour over the vegetables, stirring continuously for 1-2 minutes to form a roux.
  4. Add Liquids & Chicken: Slowly pour in chicken broth and milk while stirring. Add shredded chicken and bring to a gentle simmer for 10 minutes.

2️⃣ Make the Dumplings

  1. Prepare the Dough: In a mixing bowl, combine Bisquick mix and milk. Stir gently until a soft dough forms.
  2. Form Dumplings: Drop spoonfuls of dough (about 1 tbsp each) onto the simmering stew.
  3. Cover & Cook: Cover the pot with a lid and cook for 15 minutes (do NOT stir during this time).
  4. Check for Doneness: Dumplings should be firm on the outside but soft and fluffy inside.

3️⃣ Serve & Enjoy

  • Ladle into bowls and sprinkle with fresh parsley for garnish.
  • Serve warm and enjoy this classic homemade comfort food!

Notes

Notes:

For Extra Creaminess: Add ½ cup heavy cream instead of milk.
Gluten-Free Version: Use Gluten-Free Bisquick and substitute cornstarch for flour.
Storage: Keep leftovers in an airtight container for up to 3 days.
Reheating: Warm in a pot over low heat or microwave for 2 minutes, adding extra broth if needed.
