  • Total Time: 40 minutes
  • Yield: 6 servings

Ingredients

🔹 Beef Tenderloin Preparation:

✔ 1 whole beef tenderloin roast (about 2-3 lbs)
✔ 2 tbsp olive oil
✔ 1 tbsp kosher salt
✔ 1 tsp black pepper
✔ 1 tsp garlic powder
✔ 1 tsp onion powder
✔ ½ tsp paprika (optional, for added depth)

🔹 For the Garlic Butter Baste:

✔ 3 tbsp unsalted butter
✔ 4 cloves garlic, minced
✔ 2 sprigs fresh rosemary
✔ 2 sprigs fresh thyme
✔ 1 tbsp Worcestershire sauce

🔹 For Serving:

✔ 1 tbsp fresh parsley, chopped (for garnish)
✔ ½ cup au jus or beef broth (optional, for extra moisture)

Instructions

Step 1: Prepare the Beef Tenderloin

1️⃣ Trim any excess fat and silver skin from the beef tenderloin using a sharp knife.
2️⃣ Pat the meat dry with paper towels to help achieve a better sear.
3️⃣ Rub the beef with olive oil, then season with salt, pepper, garlic powder, onion powder, and paprika.

Step 2: Sear the Tenderloin for a Flavorful Crust

1️⃣ Heat a cast-iron skillet or heavy pan over medium-high heat.
2️⃣ Add olive oil, then sear the beef on all sides for 2-3 minutes per side, until a golden-brown crust forms.

Step 3: Cook to Desired Doneness

1️⃣ Preheat oven to 400°F (200°C).
2️⃣ Transfer the seared beef to a baking sheet or roasting pan.
3️⃣ Melt butter in a small saucepan, then add garlic, rosemary, and thyme.
4️⃣ Brush or spoon the garlic herb butter over the beef.
5️⃣ Roast in the oven for 20-25 minutes, or until it reaches your preferred internal temperature:

  • Rare: 120-125°F (49-52°C)
  • Medium-Rare: 130-135°F (54-57°C)
  • Medium: 140-145°F (60-63°C)
  • Well-Done: 155°F+ (68°C+)

Step 4: Rest & Serve

1️⃣ Remove from the oven and let it rest for 10-15 minutes to allow the juices to redistribute.
2️⃣ Slice into medallions or thick-cut steaks.
3️⃣ Serve with au jus, mashed potatoes, roasted vegetables, or a side of horseradish sauce.

Notes

For Extra Flavor: Let the beef marinate for at least 2 hours before cooking.
Use a Meat Thermometer: This ensures perfect doneness without overcooking.
Resting is Crucial: Skipping this step will cause the juices to run out, making the beef dry.
Storage: Leftovers can be stored in an airtight container for up to 3 days.
